Sheet-Pan Lemon Garlic Chicken & Veggies
Ingredients
1.5 lb chicken thighs (or breasts)
1 head broccoli (or 3 cups florets)
2 bell peppers, sliced
1 red onion, sliced
3 tbsp olive oil
1 lemon (zest + juice)
3 cloves garlic, minced (or 1 tsp garlic powder)
1 tsp salt, 1/2 tsp pepper
1 tsp paprika (optional)
Instructions
Heat oven to 425°F.
Toss broccoli, peppers, and onion with 2 tbsp oil, salt/pepper, and paprika on a sheet pan.
Toss chicken with 1 tbsp oil, garlic, and half the lemon juice + zest. Nestle chicken into veggies.
Roast 25–30 min (until chicken reaches 165°F). Squeeze remaining lemon over top.
Serve as-is or over rice.
