Sheet-Pan Lemon Garlic Chicken & Veggies

Ingredients

  • 1.5 lb chicken thighs (or breasts)

  • 1 head broccoli (or 3 cups florets)

  • 2 bell peppers, sliced

  • 1 red onion, sliced

  • 3 tbsp olive oil

  • 1 lemon (zest + juice)

  • 3 cloves garlic, minced (or 1 tsp garlic powder)

  • 1 tsp salt, 1/2 tsp pepper

  • 1 tsp paprika (optional)

Instructions

  1. Heat oven to 425°F.

  2. Toss broccoli, peppers, and onion with 2 tbsp oil, salt/pepper, and paprika on a sheet pan.

  3. Toss chicken with 1 tbsp oil, garlic, and half the lemon juice + zest. Nestle chicken into veggies.

  4. Roast 25–30 min (until chicken reaches 165°F). Squeeze remaining lemon over top.

  5. Serve as-is or over rice.
