One-Pan Pork Chops with Garlic Mushroom Pan Sauce

Ingredients
4 pork chops
8–12 oz mushrooms, sliced
1/2 onion, sliced
1 tbsp butter + 1 tbsp olive oil
2 cloves garlic, minced
1/2 cup chicken broth
1 tsp Dijon (optional)
Salt/pepper
Instructions
Season pork chops with salt/pepper. Sear 3–5 min/side (to 145°F). Remove to plate.
Add mushrooms + onion to pan; cook 6–8 min. Add garlic 30 seconds.
Add broth (and Dijon). Simmer 3–4 min.
Return pork to pan just to warm. Spoon sauce over top.
